Chicken Caesar Pasta Salad


  • 1 pound dry pasta-Any type will do (I like to use bow tie pasta myself)

  • 1 pound cooked chicken breasts, diced or shredded to your liking

  • 1 small head of Romaine lettuce, roughly chopped (about 6 cups loosely packed)

  • 1 pint grape tomatoes

  • 1 cup croutons

  • 1/3 cup freshly-grated Parmesan cheese-shredded will do

  • (optional) 1/4 cup toasted pine nuts


  1. Cook pasta al dente according to package instructions.

  2. Drain the pasta into a colander, then rinse thoroughly with cold water to stop the cooking process.

  3. Drain pasta and return it to the pot.

  4. Add remaining ingredients, and toss until combined.

  5. Serve immediately, or refrigerate for up to 1 day.

Be sure to mix this idea up a bit and make it your own.
